Whipped Maple Sweet Potatoes
3 pounds sweet potatoes, keep them similar in size
2 Tablespoons heavy cream or butter
1/3 cup maple syrup
1/2 teaspoon cracked black pepper
1/2 teaspoon salt
Preheat the oven to 500 degrees.
Place the sweet potatoes directly onto the middle oven rack and bake for 45 minutes or until a knife slides easily through the center.
Remove the potatoes from the oven and let cool for 10 minutes.
Slice the potatoes lengthwise and using a spoon scoop the flesh or middle of the potato, discard the skin, into the bowl of a food processor fitted with the steel blade.
Pulse for 45 seconds.
Add the heavy cream, maple syrup, pepper, and salt and process until smooth, another 30 seconds.
