Angel Hair Pasta With Cherry Tomatoes

1 Pound KINGS Fresh Angel Hair Pasta
1 Small Onion
2 Garlic Cloves
2 Pints Cherry Tomatoes
1/4 Cup Kings Extra Virgin Olive Oil
1 Bunch KINGS Organic Fresh Basil Leaves
Grated Parmesan Cheese

1. Cook the pasta according to package directions, being sure to salt the water very well.
2. (while the pasta cooks, prepare the sauce...)
3. Peel the onion and mince it very finely or process it in a mini-chop to make 1/2 cup.
4. Peel the garlic cloves and cut them in half.
5. Wash the tomatoes. Cut them in half and set aside.
6. Preheat a medium sauté pan. Add the olive oil. When the oil is hot, add the onion and sauté, stirring frequently, until the onion is soft and translucent, 2-3 minutes. Add the garlic and sauté another 1-2 minutes, adjusting the heat as necessary so the garlic does not brown.
7. Stir in the tomatoes and cook until the tomatoes soften and the skins start to come loose, about 5-6 minutes.
8. Remove the garlic and discard. Julienne several basil leaves and stir them into the sauce.
9. Drain the pasta and toss it with the sauce. Garnish with more basil and parmesan cheese. Serve with a green salad.
