Blue Cheese Stuffed Figs wrapped in Prosciutto

12 large fresh figs
4 oz wedge of excellent quality blue cheese, cut into 12 cubes
6 thinly sliced prosciutto, cut lengthwise in half
6-8 tbls very good quality Kings Balsamic Vinegar
Grinding of black pepper

Pre heat broiler on medium
1. Let blue cheese come to room temperature. Cut figs vertically, not cutting all the way through.
2. Place one cube of blue cheese in each fig and gently close, wrap prosciutto around each fig. Place figs on a cookie sheet and place under the pre heated broiler until browned and prosciutto is crisp. Arrange on a platter and drizzle with Balsamic Vinegar and grinding of black pepper.
