Delicious Healthy Spinach Frittata

1 Kings Large Cage Free Egg plus 2 large egg whites
2 tablespoons Gruyere cheese, grated
1 tablespoon Parmesan cheese, grated
2 teaspoons Kings Organic 1% Milk
1 tablespoon Kings Fresh Organic Basil, coarsely chopped
½ teaspoon lemon zest
Salt and ground pepper
1 teaspoon Kings Extra Virgin Olive Oil
2 tablespoons shallot, minced
2 cups loosely packed baby spinach
Cooking spray

For Salad:
2 cups salad greens
½ teaspoon Dijon mustard
1/4 teaspoon lemon juice
1 teaspoon Kings Extra Virgin Olive Oil

  1. Preheat oven to 450°F. Place a 6-8”cast iron pan (If you do not have a cast iron pan you can use an oven-safe baking dish), on a rimmed baking sheet and place in the oven to preheat. Meanwhile, in a large bowl, whisk together egg and egg whites, 1 tablespoon of the Gruyere and all of the Parmesan cheeses, milk, basil, lemon zest, 1 teaspoon of salt and a pinch of pepper.
  2. In a separate small skillet, heat 1 teaspoon of the olive oil over medium heat, add minced shallots and cook until softened, about 4 minutes. Add spinach; cook until wilted, about 2 minutes. Season with salt and pepper. Allow the spinach to cool slightly, then mix into the prepared egg mixture.
  3. Remove heated pan from oven (be careful, it will be very hot!) and coat with cooking spray. Immediately pour in egg and spinach mixture into the pan, and and top with the remaining Gruyere cheese. Bake until frittata is puffed up and golden brown, about 10-15 minutes.
  4. To make the side salad, prepare the vinaigrette by combining the lemon juice, Dijon mustard and olive oil. Toss the salad greens with the dressing, then season with salt and pepper. Serve frittata with prepared salad.
