Fluke Crudo With Meyer Lemons

Fluke Crudo With Meyer Lemons

1 lb fluke fillet, no skin, sliced thinly with a very sharp knife
1/4 cup radish, julienned
3 tsp lemon salt, (combine 1 tsp lemon zest to 2 tsp coarse salt)
1 tbls KINGS Extra Virgin Olive Oil
1 tsp Meyer lemon zest
1 tbls KINGS Organic Fresh Chives
¼ tsp black pepper
Meyer lemon sauce
5 Meyer lemons, zested and juiced
1/2 cup olive oil
1/2 tsp salt
1/2 tsp pepper
1 tsp minced parsley

For the Meyer lemon sauce
1. Whisk lemon zest, lemon juice, olive oil, salt and pepper.

For the fluke:
1. Drizzle 1 tbls of Meyer lemon sauce on each platter. Arrange 5-6 slices of fluke on plate next to each other lengthwise.
         2. Drizzle extra-virgin olive oil over slices. Season with lemon salt and pepper then garnish with radish, chives and zest
