Paella

Paella

2 Tablespoons Olive Oil
1 Onion, chopped
4 Kings Pork Sausage Links, cut into ¼-inch rounds
4-6 Boneless, Skinless Kings/Bell & Evans Chicken Breast, cut into ½-inch pieces
½ Red Pepper, chopped
½ Green Pepper, chopped
1 Cup Fennel, chopped
2 Garlic Cloves, minced
½ Teaspoon Adobe seasoning
2 (5 oz) Bags Yellow Rice with seasoning
2-3 Cups  Chicken Broth
1 (14 oz) Can Fire Roasted KINGS Diced Tomatoes
2 Cups Peas or Sliced Green Beans
¾ Pound Medium Shrimp, peeled and deveined

1. Heat the oil in a large skillet.  Add the onion and cook for 2 minutes. 
2. Add the sausage and continue cooking to brown, an additional 3 minutes. 
3. Add the chicken and brown for 3 minutes.
4. Stir in the peppers, fennel, and garlic, and continue cooking and stirring for 2 minutes.
5. Add the Adobo seasoning, stirring to coat the ingredients.
6. Add in the rice, cooking and stirring for an additional 2 minutes.
7. Drain the tomatoes, reserving the liquid.  Add enough chicken broth to the tomato juice to make 3 ½ cups of liquid.  Add to the pan, stir and bring to a boil.  Reduce the heat and simmer, covered for 10 minutes.
8. Stir in the tomatoes, peas or beans, and shrimp.  Cover and simmer for an additional 10-12 minutes, or until rice and shrimp are done.
