Pineapple & Jalapeno Glazed Salmon

Pineapple & Jalapeno Glazed Salmon

4 – 6 oz portions center cut salmon fillet

1/4 – 1/3 C Kings Pineapple Jalapeno Glaze

salt and black pepper to taste

1 1/2 tsp canola or vegetable oil

1. Pre-heat your oven to 475F. Line a baking sheet with foil and then parchment paper.

2. Season the salmon with salt and pepper to taste. 

3. Heat a large heavy-bottomed skillet over medium high heat for 3 minutes (if using a non-stick pan, add the oil before placing the pan onto the heat). 

4. Add the oil to the pan (it should just smoke) then add the salmon fillets, skin side up, and cook for about 3-4 minutes, until there is a deep golden crust.

5. Carefully transfer the fillets to the parchment lined sheet, flipping so that the browned side is up. 

6. Top each fillet with 1-2 Tbsp of the pineapple jalapeno glaze, spreading it evenly over the top of the fillet.

7. Place the salmon in the hot oven* and cook until the glaze is bubbling and salmon is just cooked through (internal temperature of 145F). Serve immediately. 

* Salmon may also be finished under a broiler – position the rack about 8” below the broiler element to ensure that the glaze doesn’t burn before the salmon is cooked through.
