Skewered Shrimp Wrapped in Prosciutto w/Pesto

Pesto:
1 Cup packed KINGS Organic Fresh Basil leaves
¼ Cup Kings Extra Virgin Olive Oil
2 Tablespoon toasted pine nuts
1 Large garlic clove
Pinch of salt to taste
¼ Cup freshly grated imported Parmesan cheese

48 6” wooden skewers soaked in water
24 Kings Extra Large Shrimp, peeled and deveined
24 Large KINGS Organic Fresh Basil leaves
12 Thin slices Citterio Silver Label Prosciutto, cut in half

Adjust oven rack one shelf down from top of oven and preheat broiler.
1. To make pesto, in blender combine basil, oil, pine nuts, garlic and salt.  Process until a creamy consistency.  Transfer pesto to a bowl and stir in grated cheese.
2. On a work surface cover each slice of Citterio Silver Label Prosciutto with a basil leaf and a shrimp.  Spoon some pesto on each shrimp.  Roll into a neat bundle.  Double skewer two wrapped shrimp on each.
3. Broil for 4-6 minutes per side.  Serve hot.
