St. Paddy’s Day Apricot Glazed Corned Beef

4-1/2 Pounds Corned Beef with Seasoning Pack
12 Ounces Bottle of your Favorite Beer, (do not use a light beer, something that has a rich deep hops flavor)
1 Cup Apricot Preserves
1/4 Cup Kings Organic 100% Pure Honey
1/4 Cup Brown Sugar
2 Tablespoons Soy Sauce
2 Tablespoons Freshly Mashed Ginger
1/8 Teaspoon Fresh Ground Pepper

Preheat oven to 350 Degrees.

1. Spray a large glass baking dish with non-stick cooking spray. Rinse corned beef and place in prepared baking dish. Add 1¼ cups of beer and included seasoning pack, then cover tightly with aluminum foil and bake at 350 Degrees F. for 2-3 hours; drain liquid.
2. In a small bowl combine apricot preserves, balance of the beer (1/4 cup), honey, brown sugar, soy sauce and mashed ginger. Spread the apricot mixture evenly over the corned beef.
3. Bake uncovered at 350 Degrees F for 25 to 30 more minutes, or until the meat is tender. Baste occasionally with pan drippings.
4. Slice corned beef across grain and serve.
