Steak and Veggie Kabobs with Creamy Avocado Dipping Sauce

1 1/2 lbs Kings organic Beef sirloin, cut into bite sized chunks
2 large Kings organic red bell peppers, cut into 1″ pieces
2 large Kings organic yellow or orange bell peppers, cut into 1″ pieces
1 Kings organic red onion, cut into 1″ strips
2 Kings organic zucchini, cut into 1/2″ thick coins
12 oz Kings organic cremini mushrooms, whole
1 bottle of your favorite Salad dressing or steak marinade
2 tbsp Kings organic olive oil
1/2 tsp salt

Avocado sauce:
1 whole Kings organic Hass avocado, peeled and with pit removed cut into small pieces
1/2 cup Kings organic Greek yogurt
1 tsp Dijon mustard
2 tsp Kings organic lemon juice
1 tsp lemon zest
1/4 tsp ground cumin
1/4 tsp salt
1 tsp minced Kings organic garlic
tiny pinch hot paprika
8-10 wooden skewers, soaked in cold water for 20 minutes

Preheat your grill to medium
1. Place steak cubes in a large mixing bowl. Pour beef marinade over, toss, then cover with plastic wrap and refrigerate for 1-3 hours.
2. After the meat has finished marinating, place the veggies in a separate large bowl and drizzle olive oil over. Add salt and toss well.
3. Skewer 4 pieces of steaks on a soaked skewer, followed by skewering veggies on soaked skewers as well. Repeat with remaining kabobs.
4. Spray your grill with cooking spray. Grill steak kabobs for about six minutes per side, until meat has cooked through. Grill veggies skewers for 6-8 minutes or until tender.
5. To make the avocado sauce, place all ingredients in a food process or blender, lend until smooth. Season with additional salt and hot paprika to taste. Serve sauce with kabobs and enjoy!
