Banana nut bread. Yields 1 loaf. 1 1/2 cups arrowhead mills oat flour. 1/2 cup arrowhead mills gluten free all purpose flour. 1 cup sugar. 1 stick butter, softened. 4 large eggs. 3 ripe bananas, mashed. 1/2 cup milk. 1 tsp cinnamon. 2 1/2 tsps baking powder. 1 tsp salt. 1 cup walnuts, chopped. 1. Preheat oven to 325 degrees F. Coat 9x5 inch loaf pan with non-stick cooking spray. 2. Mash the bananas with a fork in a small bowl. 3. Combine gluten free all - purpose flour, oat flour, sugar, cinnamon, salt, and baking powder. 4. Add milk, eggs, and butter to flour mixture. Mix until well combined. Add in mashed bananas and walnuts. Stir to combine. Pour batter into prepared loaf pan. 5. Bake for 1 hour and 20 minutes (Directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted) or until a toothpick inserted in the center comes out clean. Allow to cool completely before removing from pan and slicing. Oat flour chocolate chip cookies. Yields 36 cookies. 2 1/2 cups arrowhead mills oat flour. 1/2 cup butter, softened. 2 eggs. 1/2 cup brown sugar, packed. 1/2 cup sugar. 2 tsps vanilla extract. 3/4 tsp baking soda. 1/4 tsp salt. 1 1/2 cups chocolate chips. 1. Preheat oven to 375 degrees F. Lightly spray baking sheet with non-stick cooking spray or line with parchment paper. 2. In a mixing bowl combine oat flour, salt, and baking soda. Set aside. 3. In a separate mixing bowl combine softened butter and sugars. Mix until creamed together and fluffy. Add the eggs one a time and mix to combine. Add the vanilla and mix. 4. Add dry ingredients and chocolate chips to wet ingredients. Mix until combined. 5. Scoop by tablespoonful onto prepared baking sheet. Bake in preheated oven 9-11 minutes (Directions developed using conventional ovens. Ovens vary; baking time may need to be adjusted) or until edges are golden brown. Tips and tricks. Oat flour is much lighter than its wheat counterparts and because of that, it should be used by equal weight instead of volume. Oat flour is also crumbly in texture and therefore benefits from adding extra binders like eggs. Store in a cool dry place. Tear here.
