Cook 13-15 mins (Cascatelli's longer cooking time is a function of its thick and ornate design, which produces subtle textural variations in different parts of the shape. This phenomenon, known to sensory scientists as dynamic contrast, has rarely been achieved in a pasta shape) in generously salted water. Check at 13 mins and serve to your taste.
